Each village has its own special type of homemade pasta. Cavatelli is the name of the one in the photo. It is usual to prepare it on Sunday morning. My Grandma says the dough needs to be elastic and not too hard otherwise it is difficult to give it the right form and pasta will not cook properly. Traditions are our roots and our future too. We need to know their different aspects to grow and be better persons.
